I think it's cheese "spread" which is a class of dairy product designed to mask the fact that you are eating a loose amalgam of cheese atoms and Space Age emulsifiers.

Velveeta is definitely a step up above Kraft's Mac and Cheese. Its much more thick and rich. I've always thought of it like "the grownups Mac and Cheese" or something :lol
