I was bored and hungry so I decided to finally cook up something I've been dying to try. I have this amazing European smoked sausage, so I threw it in the oven. While it was cooking I cut up some potatoes (into cubes) and put them in a frying pan with some olive oil; normally I use I Can't Believe It's Not Butter, but since I had meat in the oven I decided to cut down on any excess sodium.
I had the potatoes on a rather low heat for abour 20 minutes. By that time I could see them browning lightly a tad. At that point I got out another pan, added more olive oil, and then put my veggies in: yellow and red bell peppers along with mushrooms. After a few minutes of frying I put some crushed croutons in. I let them cook into the veggies and added a few spices as well. Finally my sausage was done, so I took it out the oven and cut it up into smaller pieces. After that I mixed my veggies and sausage in with the potatoes (nice and brown now), and flipped everything around to mix.
I also had some frozen veggies done on the side, with some butter mmm. Everything was awesome, although I used a bit too much olive oil.
Potatoes are healthy and CHEAP. I picked up a sack at a small grocery store for around $3. Same with the bell peppers: I only bought three so in all it came to around $2-3.50.
