Arcade games I've tried:
Left 4 Dead: Following the localized Half-Life 2 game from years ago, someone has brought this game to Japanese arcades. It's the same game play but with new characters (like schoolgirls, naturally) and scenarios. The cabs have mouses for aiming a Wii nunchuck-like thing for movement.
Tekken 7: Been messing around with the new characters. I like Katarina the best so far- read that the character was designed for beginners and I would agree. She has super-easy, effective moves and I found a good launcher with back+rp for easy juggles. You can actually play this game online against other players, which is awesome since at every arcade I've gone to, almost nobody is playing fighting games apart from those Gundam Vs. Gundam games.

Nitroplus Blasterz: Sounds more like a racing game than a fighting game. This is basically Arcana Heart HD edition with various Nitroplus characters. It also feels unfinished, as even the cab had stickers showing characters with "coming soon" under them. The home version coming at the end of the year will also have more characters added. I don't really get why they released the game in this state.
Koihime Enbu: 2D fighting game based on the Koihime Musou series (Romance Of The Three Kingdoms with all the characters as females). Played pretty nicely and had some interesting movesets. This game was made by M2, who does the excellent Sega arcade/Genesis conversions for 3DS and did some for PS2. There's an earlier version of this on PS3 that I might try to hunt down now, but this game is getting a home port in September on PS3/PS4 so I don't mind waiting.
Blade Arcus: Another 2D fighting game from Sega based on all the recent "Shining" games. Looked pretty bland, played decently. I got bored of it pretty quickly.

It's worth noting that the above three games were all playable on NESICA cabs. NESICA is awesome -it's like a modern day Neo-Geo system- with games added digitally, IIRC. There's various games from Capcom, Sega, and others playable, ranging from older games to newer titles like Ultra SF4. Most of the arcades I've been scaled down on fighting games and it makes sense since you can now have 1-2 cabs with a ton of games.
Also, I see that arcades are where Konami is still very strong. Shitloads of music games and some Border Break-like mech game were all over the place. Bemani lives.
