Yeah the annoying barrel rolls are part of the way this game plays, but I agree it's annoying. Should be able to move mid roll imo. You shouldn't be trying to swerve directly side to side like you want to do intuitively. Try going up and down in diagonals to avoid missiles should stop you rolling when you don't want to.
