I just saw this thread, and I live in Cork!
There's probably not a huge amount to do here alright but I'll try to come up with a few suggestions anyway.
In terms of Restaurants, you might want to try Amicus (I hear the cheesecake is good here), Milano's, Puccino's, The Boardwalk, Fenn's Quay, Isaacs or Jacob's On the Mall. I hear The Market Lane on Oliver Plunkett street is good too. O' Conaill's Chocolate is worth visiting too.
There's plenty of good pubs. I like An Bróg myself, they play a lot of alternative and rock music and the place has a lot of character, I wouldn't go during the day though. Other good pubs are The Franciscan Well, they brew a lot of their own beers there and have a garden where you can sit out, if the weather is nice, which it has been for the last few days. Abbot's Ale House is good too.
If you're in the mood for something classier, you could try The Long Island, SoHo or Suas for cocktails.
For shopping you might to take a look at Brown Thomas for designer stuff. And the English Market for a mor ecclectic mix of unusual foods and various oddities.
For art, The Crawford Art Gallery and the Glucksman are worth a look and admission is free.
If you have time to travel for an hour or so down to the coast you can see some nice views and as it stands the weather is very beach-worthy, by our standards at least!
There's also the Fota wildlife park, which might be of interest.
