At my high school, it was kind of the norm to eat the cafeteria's food.

Sometime's they would really hit the spot. Pizza was usually great. A lot of the time it was kind of meh. Either way, the sugar cookies were always great.

I ate a lot of meat, eggs, Greek yogurt, cottage cheese. I ate very few carbs except around exams.

I walked, jogged, and did body-weight exercises (with weighted vests or bags).

No, I think the vegan argument goes that plant-sourced proteins can be as healthy and don't contribute to animal abuse. Soy and milk/egg white proteins are about the same in terms of providing the necessary amino acids but the only argument that I would really care about is that plants are a much cheaper and more efficient source of protein and when you're talking about school lunches, it might be good to set an example there so that kids are used to meat substitutes. That would reduce how much we have to spend on food and also require much less environmental resources.

Maybe one day we can let meat be a once a day thing or even just for specialish occasions.

i'm sure eating vegan hurts animals in some indirect way.   Vegans just want to push the consequences far away enough to where they don't have to think about them, but we're human, no matter what we do, something gets fucked up at some point down the line.  If everyone ate vegan, those things would be more obvious.  categorical imperative, my ass!

One thing I'm curious about if "everyone went Vegan/Vegetarian" arguments don't really focus on is if the environmental impact of cow farming for burgers and steaks and the like wouldn't just one-eighty around to being "bad soil due to over-use of farming" for plant-based diets.

I mean they have a point in regards to animal-based farming have some environmental impacts that are pretty bad (too much land being taken, manure run-off can be bad if going to places it shouldn't be). But I don't think a plant-based-diet-everyone-is-doing-it is a magical cure-all some think it is. If I remember right, there's issues with the Quinoa boom going on to where there is issues growing it since the soil is being overworked and not enough Quinoa is being saved for the native countries to use.

Huh? The animals we eat don't grow on air. It's part of the argument that the plants we grow to feed livestock feeds more people than the livestock. Bad farming practices and related problems are already a reality regardless.

Most vegetarians/vegans I know look gaunt and sickly.

I'm in favor of this program.  Mostly because it increases the chance of serving something good.  The school lunches I ate were shit and my parents for most of my K-12 life were too poor to pack a lunch.  So it was eat greasy pizza or go without.  You were actually better off using the ticket for breakfast where you can get some yogurt (ie, something edible) than hamburger that had some soy mixed in (ie, something inedible).

Yes, I know. Their point is if people suddenly stopped eating meat, it would be a lot more beneficial to the environment, but that's my point: If everyone did stop eating meat, wouldn't the same farmland and the like still have (but slightly different) over-use-of-farming impacts for a plant-based diet? I don't think everyone going Vegan/Veget is suddenly going to eliminate those issues, just change them to a Vegan/Veget issue instead.

What does fair trade or locally grown have to do with genetic engineered crops? The latter is usually the cheapest and requires the least resources.

That land that was being used to make grain for livestock would be repurposed for making other crops that humans eat. We're at 7 billion people right now, and estimates say we'll plateu somewhere around 10-15 billion. We either have to use more farmland or make better use of the farmland (and water/fertilizer/etc) that we're already using.
