We have a gas stove, which creates dead spots in the center of pans.

Then again any fool knows you can simply move the pan around so it heats equally

So I had a ton of freshly rendered duck fat leftover from yesterday's dinner so I used it in today's dinner.

brussel sprouts roasted in duck fat

herb crusted pork loin (rubbed in duck fat)

Cheated on this one: they came frozen.  Love pao de queijo. Saw them at this Brazillian grocery store that looked like a front for something else (they have like literally one shelf of food in there) so I thought I'd give them a try.  Pretty good.

There's also buying a thicker pan, which will distribute heat more evenly. My family grew up using a pancake griddle to marvelous effect.

fuck yeah

PM'd. Also, the key to cooking a pancake is to wait until the bubbles stop closing, but its still visibly wet. Waiting until it looks like a crumpet is bad form.

I have a pancake recipe that has so much in the batter that you don't really need syrup. It's like nutmeg, cinnamon, cloves, molasses, and the other usual stuff. Make a crepe variation of it, too.

CG can't handle it doe

I always end up eating them all by myself.

I had a bunch of German food at some restaurant in the middle of nowhere today. God damn. I promptly came home and started looking of recipes for things I remember eating while I was in Germany. Which was over a decade ago. :gloomy

I want to go back to eat. :(

I had pork schnitzel covered with cheese and a mushroom gravy. Potato pancakes, applesauce and spatzle on the side. :drool Hubs had sauerbraten. Baby ate pretty much everything and was in love. Although we have yet to find a food she doesn't like.... lol she's a skinny foodie.

When I was staying in Germany, they made all sorts of food for us, but honestly, I think I ate more Italian food while I was there than traditional German food. We did eat a ton of schweineruckensteak which is a lot like our pork steaks in STL (more meat and less fat), and we had a few schnitzels, so that's easy. But I specifically remember this soup with white asparagus, cubes of scrambled eggs (that were baked in a casserole dish beforehand and cut into cubes), and little meatballs. Omg. It was a broth soup, but I have no clue what kind of broth.

They also had this cake, but it wasn't super sweet like our cakes (obviously). It was baked in a loaf pan and instead of frosting, they melted sugar and poured it over the top of the cake so that it made this sweet hard shell.

I ate like 6-7 times a day there and lost 10 pounds. It was amazing.

I had a doritos nacho taco, doritos cool ranch taco, and a volcano burrito for lunch.  it was good while I was eating it.  But once you're done stuffing your face and you can smell the ingredients on your hands and upper lip while you're sitting there digesting, it pretty much ruins the whole experience.  then the itis sets in.

If I can eat dinner, tofu stir fry it is.

We haven't tried eggs yet per her pediatrician, so I'm wondering how she'll like those in a few months. Now that she's outgrown the dairy allergy, good lord. I'll give her just a few bites of something with cheese just so I don't overload her system, and she just goes "MMMMMMMM" the whole time she's eating it and starts to cry when she finishes the bite. Her mother's daughter :heart The kid doesn't cry, ever, unless food is involved.

I stuffed a leg of lamb with cloves of garlic, roasted it and then made Tzaziki, cut hunks off the base, whacked pitta beard in the microwave for 40 secs, stuffed pitta with lamb, Tzaziki, cooked cloves, pink salt and sriripachan hot sauce.

It was good. It's weird that the US regard lamb as luxury meat, you guys with your fried chicken and spicy tacos. Apart from the girl with the crackling pics that basically look a bit like fried aliens.

Yeah, lamb is only slightly easier to come by than venison here in Osaka.

They probably have venison kabobs in Tokyo though. Cormacaroni keeps telling me they're ahead of the curve.

i dunno, on the Amy's Baking Company ep, he seemed like one of those harsh-but-fair guys that weak people who take everything personally get intimidated by.  Like, either you do what he says and come out better for it or you cry and run out pouting.

bully or coward - sure, that would suck, depending on context

unpleasant unless you have something he wants - welcome to adulthood.  seems to be the norm, where upfront friendliness is the exception.  Super Type A guys like him are pretty much uniformly dicks until you're useful.

Gordon Ramsey reminds me alot of Bobby Flay.  He has a TV show where he randomly walks in to a small town restaurant and challenges the owner to cook something better than him.  Then when the restaurant owner loses, he laughs in his face, and that's the show.  It's pretty brutal.

and i think you are still in school if you think self-promoting people like gordon ramsey (or anyone in a professional position) don't mostly form relationships based around what they get out of it.   The only difference is whether they smooth it over by being friendly or not.

And that extrapolates to my entire worldview of "people" how?  edit: and i guess I'll ask about the passivity comment too.

I was training in a dojo in San Jose -- holy crap, like 15 years ago now -- when some Russian guy came in and said, "I want to fight your instructor. Our instructor politely declined, and the Russian looked like he wanted to cajole our shihan into fighting, but realized there were several other black belts there who probably wouldn't have been as... indulgent about petulance.

I wanted to say, "Dude, this isn't feudal Japan, you're not Musashi Miyamoto, and this isn't actually impressing anyone. Go join a fight league."

Sounds like Bobby Flay and the Russian would get along.

Gordon Ramsay at least seems capable of admitting when someone impresses him.  This is all based on his tv shows though.  I don't know anything about him outside of those.  Like on "the taste" or "Hell's Kitchen" he'll give props when it's due.  And Kitchen Nightmares is about helping half ass restaurants clean their shit up.

I find it easier to reconcile my hatred of Ramsay when faced with such insolent simplicity laced posts such as yours Flamengo.

The fact is, the purity of Kitchen Nightmares has been molested into something UTTERLY contrary to the series' original intention. And that fault lies at Americas doorstep, only their blind arrogance represses their deserved elucidation.

The use of the word extrapolates is also unimpressive to my huge brain.

Can't say I'm a fan of blood sausage... I don't like how they have so much filler (rice, bread, oatmeal..etc).  Like I realize it needs something to give it some stability but I'd rather just have the blood straight up.

i got some creme fraiche (i can't not say it like Randy Marsh) at Trader Joe's today.   Put it on some of those chocolate lava cakes and...yuck.  it's not sour cream, not greek yogurt, not cream cheese, but it's all 3 combined somehow.

did i use it wrong?
