wow. Lime really does make EVERYTHING taste good. Have some tequila? Get some salt and LIME. Have some chicken? SPRITZ SOME LIME ON IT. Have watermeleon? Well why hello, melon water! Squeeze a lime on it! It tastes amayyyyy-zing.

Holy fuck, lime is amazing. Fucking latinos influencing my cooking. Got me cooking like a Puerta Rican with a dash of Mexican. My ex would be so proud! Speaking of which, why are latino men so fucking hot??

Lime greatly enhances food and some beers. However there's times where I like it so much I add too much and it drowns out the actual flavor of the food instead of complimenting it. Overall I've found what makes a nice balance though.

Acid adds tartness which can brightens flavors in food by being complimentary to umami. Citrus and vinegar are common sources of acid in cooking. The real secret is buying straight citric acid (aka sour salt) and using a pinch of that in your recipes. You can get it online or at your local Indian grocer.

Lindsay and I make a lot of soups (we like brothy shit) and my favorite is chicken noodle. The secret to the chicken noodle I make is to add the zest of an entire lemon during the initial broth cook phase. Also a little bit of ginger.

where we live has one of the highest vietnamese populations in the US. We are in Pho mecca that isn't actually Vietnam. So his hate for pho is mind boggling.

Borth and soup isn't the same! A good borth is super nice though, which is why I love ramen and pho.

But I'm a huge fan of a proper soup, served with bread (or garlic baguettes). I need stuff inside my soup, like macaroni in tomato soup, broccoli and cauliflower in cauliflower soup, fish chunks in fish soup etc etc. A good and fresh fish soup is everything.

I ordered spring rolls and extra noodles today and I'm not full. I kinda know what he means. Guess it depends on what I ate earlier. I only had a handful of blueberries for breakfast and did jiu jitsu after so maybe I just need more in my tummy.
