So far I'm seeing people suggest Opera VPN Free for iPhone and TOR for desktop regarding browsers. Trying to find a good email vpn and other stuff.
What is it you're wanting to protect against? If it's collection of personally identifiable activity then you'd need to stop using social media, change from free email, and any other things that use your real identity online on sites known to have data collected by agencies (though several companies have since taken steps to reduce such passive upstream collection since the Snowden leaks). That still wouldn't prevent IRL forms of big data tracking.
If it's general upstream ISP tapping then an internationally based VPN would help by moving all your traffic through an encrypted tunnel in another country. On the other hand online trackers can still uniquely a user's system despite changes like a tunnel. Each bit of information can be used to create a unique fingerprint that can be updated to reflect changes: browser version, window size, what settings are enabled/disabled, browser local storage data, timezone, the fonts installed on the system, etc.
Which is why it's worthwhile blocking tracking scripts, ads, and social media buttons all of which can track parts of your presence around the web. Apart from any mobile apps/browser addons that may be collecting unwanted data about your activities. Alternative search engines can also be used like DuckDuckGo and non-US/paid email providers. Going all out you could add PGP encryption to email and secure messaging, though it's rather inconvenient.
There's not really an all-in-on solution, it just depends on what you're wanting to avoid and how much convenience you're willing to trade. A VPN + the uBlock Origin addon with tracker blocking and privacy lists is a good basis.
