To be fair though, American Cheese is not the same as "Kraft singles". If it's called cheese, it has to by law be made from real cheese.

Yes. If it's not "cheese food product". Boars head has some really tasty American cheese that isn't "cheese food product". Lots of brands have the non-individually wrapped deli style cheese.
There's a HUGE difference between "cheese food product" and "pasteurized process cheese"
via the FDA:
* Pasteurized process cheese - contains 100% cheese
* Pasteurized process cheese food - contains at least 51% cheese.
* Pasteurized process cheese product - contains less than 51% cheese.
