Nobody is happy to be stuck doing chores longer at the end of a shift (esp. if that means ending past midnight, like it's probably the case for those pizza joints), even if it's part of the job and you're paid for it. Most everyone will do it nonetheless because a job is a job, but I guess we're all entitled to be a bit grumpy some days.

Not sure the situation is that different in Europe anyway. "Real restaurants" will often close kitchen an hour or two earlier ahead of closing the doors of the restaurant itself and / or turn down customers after a certain hour, but fast food & delivery joints don't have that luxury.

You'd think. But this is also the same America that  actively tries to AVOID paying people overtime hours despite working those folks into overtime. I've seen someone have to fight HR to get overtime pay because HR/payroll was cutting their recorded hours to avoid paying overtime.

As it is, I agree with Dennis: If you say you're open till 10: That should be open until 10 for customers. You can't sit there and have it be for you and customers and expect to clean/prep for the next day at the same time. You just can't. I do apologize every time I'm the last one in/closing within 20 mins at places. Because I understand the want to get home and having to clean up. So I try to order, get my food quickly and get out so they don't have to wait on me. But still...

When I used to manage a restaurant we had a "last order is taken 15 minutes before closing" rule.
And had anyone who picked up the phone after those 15 minutes answer it that we were closing.
Some disappointed people, but no problems were had. Ever.

The test I use is if my transaction can be reasonably completed before the store closes. It's a pretty simple test.

Common courtesy is that closing isn't the last chance for placing an order, but the time that you better be done being a bother to the restaurant.   Even that might be pushing it sometimes.   If you're just buying a snapple or a readied made pizza you can walk up to the counter until closing time.

The local Taco Bell likes to lock the doors about 20 minutes before closing time, which I'm fine with because the drive-through is still open and I use that a lot anyway, and a few times I've had to get the staff to unlock the door so I could leave.

Except not everyone else is treated like the devil or babysitters for not doing what parents are supposed to do. Plenty of parents treat teachers like shit because of the faults of themselves or thier own kids.
