I don’t make a ton of money but my credit score is about as perfect as it could possibly be. I was like this should be the other way around and went with a different card. 1% back? Seriously Apple lol.

Don't think of Apple Card as something Apple acting as the creditor or the bank. They're more like licensing their name out.  Like Nachobro said, get an AmEx and just pay off the balance at the end of the month.
