Excellent. I'll try to contribute. Low and slow BBQ has been my thing for a while now...and chili con carne. Love making chili.

Timely thread.

Today I made Pot Roast Beef with a French Onion Gravy and also turkey soup from the Christmas turkey (boil carcass, make stock, add veggies and remaining turkey meat and off you go).

A friend of mine came over today to learn some BBQing. He works for the biggest beef exporter in Australia, so has access to top quality Wagyu beef.

Decided that pork ribs were an easy starting point so did a couple of racks and he also brought over a 500g piece of Wagyu rib fillet steak.

I made a rub for the ribs from:
  • salt
  • pepper
  • onion powder
  • garlic powder
  • hot paprika
  • cayenne pepper
  • celery salt
Coated them good and cooked them for 2 hours at about 130C (took them off at internal temp of about 74C).

Then I wrapped them in foil with a knob of butter and some Lillie's Eastern North Carolina BBQ sauce (vinegar, brown sugar and mustard based).

Cooked for about an hour more.

Then unwrapped them and basted them in the sauce to get some stickiness going. Cooked for another hour, basting every 15 minutes or so.











With the beef, I made a rub from:
  • salt
  • pepper
  • garlic powder
  • onion powder
We decided to reverse sear it because it was thicc.

Got it to about 50C internal temp indirect cooking and then seared it directly over the coals for a few minutes each side until there was a good crust.

I'm no real cook, I just really grill meat and roast vegetables, my fiancee does love to cook when she has the time. Last week she made a delicious beef bourginon but I don't think she took any pics :(

Been doing a lot of cooking recently.

Made lasagne and chili con carne.



I cheated and used bechamel from a jar. One of these days I'll be bothered to make it from scratch, but until then...

It turned out great and most importantly, no complaints from the kids.

I got back into making chili over the Christmas break and thought I would make a small batch with the leftover mince meat.



I mixed my own chili spices using:
  • Cumin
  • hot paprika
  • smoked paprika
  • garlic powder
  • onion powder
  • oregano
  • ground coriander
  • chilli flakes
  • ground cayenne pepper
  • salt and pepper
Cook some onion off with crushed garlic, add the meat (I usually use a mix of mince and cubed chuck steak), add some red kidney beans and then a can of crushed tomatoes and some beef stock.

I also made some corn bread (savoury not sweet) in my bread maker to go with it. Just followed a recipe from here minus the jalapenos (so the kids would eat it). Turned out great and goes fantastic with the chili.

I poached some chicken thigh fillets for my meal prep for the week (garlic, onion, thyme, cayenne pepper, pickled chilis and carrot, vinegar, cumin, bay leaves and pretty much anything else I had lying around with some flavour) and the stock turned out spicy and very tasty.

I thought is would be criminal to waste it, so I strained it, added some Japanese noodles, celery, snow peas, pre-cut coleslaw mix I had in the fridge, and some of the chicken pieces and it turned out amazing for a Sunday afternoon lunch.



Family enjoyed the hell out of it, so that's a win!
