Ragù alla Bolognese is probably the most popular condiment for pasta in Italy; plenty of people do it without milk, and use it on all kinds of pasta (not just tagliatelle).
Sure there are things that are more frowned upon, like using cream in Carbonara or whatever, but at the end of the day, these food purisms always come off as very forced drama.
